Tenerife isn't just beaches and sunsets over Teide. For anyone who knows where to look, it's also home to one of the most authentic cuisines in the Canary Islands, provided you know where to eat it. The right place is called a guachinche: small family-run taverns, often set up in a garage or a wine cellar, serving their own homemade wine alongside dishes that never appear on the tourist menus of Playa de las Américas.
Most first-time visitors don't even know they exist. We've been bringing our guests to them for years, and the reaction is always the same: "Why didn't anyone tell us this before?" So here are the six dishes that always show up on the table at a real guachinche.
It starts with coffee, though calling it that undersells it. A barraquito is a layered morning ritual: condensed milk at the bottom, a touch of Licor 43, slowly poured espresso, milk foam and a dusting of cinnamon or lemon zest. Drink it without stirring, so every sip tastes a little different.
Small, thin-skinned Canarian potatoes boiled in heavily salted water until the skin wrinkles (arrugadas means "wrinkled") and a thin crust of salt forms. Always served with mojo: red and spicy with chilli, or green with coriander and garlic. You never eat just one.
Local goat's cheese, grilled until golden and slightly crisp outside while staying soft inside. Simple, often finished with a drizzle of mojo or palm honey (miel de palma), and almost always the first dish to reach the table.
The dish that best represents a real guachinche. Pork cubes marinated for hours in garlic, paprika, vinegar and local wine, then fried until crisp outside and juicy inside. Eaten with your hands, alongside bread and papas arrugadas.
Gofio is toasted-grain flour, a Canary Islands ingredient that predates the Spanish arrival on the island. In escaldón it's mixed with boiling fish broth until it becomes a thick paste, then topped with raw onion and mojo. It's a dish that divides opinion, but those who love it order it at every guachinche.
The great Sunday dish. Salted, then desalted cherne (a local grouper), boiled with potatoes and sweet potatoes, served with gofio kneaded into the broth and Canarian mojo on the side. It's the dish every islander grew up eating, and every guachinche makes its own way.
One practical tip: the best guachinches rarely have a flashy sign, and many only open on weekends or during certain times of year tied to the wine harvest.
